bigoli w/ korean bottarga, skate wing w/ apple miso sauce

this is dinner from last night


pan fried skate wing with grilled bread crumb crust on top. miso apple sauce (charred akai miso, apple juice, scallion)


bigoli (hollow tube pasta) in korean bottarga (fish roe) sauce (pureed brussel sprout, italian subdried tomato, minced dried oysters, duck fat; sauce made from scratch)
