primi: thin udon noodle in soy & chinese rice wine sauce, with yellow zucchini and cabbage underneath, and sesame and shallot confit on top



secondi: grilled cornish hen (looks a little burnt huh?) in two kinds of marinates 1) frangelico & fermented bean curd (H's), 2) soy & chinese rice wine (K's)

K: My first contribution to our dinner (and first time ever to this blog) for a while. After one week our fridge is empty enough to allow new grocery! This is salmon cubes, pan-fried with a light batter, finished under the broiler with a mix of panko (Japanese breadcrumbs) , salt, white pepper and paprika on top. Kinda like fish fry without the deep frying. Inspired by Maki.

paella w/ winter treasures (海味): sun-dried scallops, octopus, chinese winter ham (臘肉), shiitake mushroom, saffron, bonito, cooked in sun-dried conch, leek and lemongrass stock, sun-dried tomato, tomato paste and sweet vermouth. pureed brussel sprouts and paprika on top.

penne w/ eel. homemade tomato sauce (from the freezer; K made it a while ago), japanese dried anchovy, sunflower seeds



side dish: sauteed endives w/ cherry tomatoes, duck confit bits, dressed (lightly) with balsamic vinegar & chocolate

chawanmushi & beef in peanut butter sauce

- chawanmushi (steamed savory eeg custard) w/ shishito peppers puree & minced dried shrimp


- thinly sliced stir-fried beef w/ artichoke in peanut butter sauce

bigoli w/ korean bottarga, skate wing w/ apple miso sauce

pan fried skate wing with grilled bread crumb crust on top. miso apple sauce (charred akai miso, apple juice, scallion)
